Hash Brown Casserole

I don't remember where this comes from, but it's potatoes, there's basically nothing you can do wrong here.


  • 32 oz. Frozen shredded hash-brown potatoes
  • 2 cups Shredded Cheddar cheese (reduced fat)
  • 8 oz sour cream (low fat)
  • 1 can Chunky Cream of Potato Soup or Loaded Baked Potato (not condensed)
  • ¼ cup Onion, chopped
  • ½ cup Grated Parmesan cheese
  • Salt & pepper to taste


  1. Combine all ingredients in a large bowl
  2. Pour into 9x13 greased baking dish
  3. Cover with tinfoil
  4. Bake at 350°F for 30 mins
  5. Uncover for 2 to 3 min. to brown top
